As we celebrate Black History Month, we delve into the heartwarming story of Tamara Williams, an educator and proud grandma certified baker, whose roots trace back to the heart of Mississippi. Her culinary journey, deeply intertwined with family traditions, unfolds a rich tapestry of flavors that bridge old school charm with the vibrant hues of the new school. Tamara’s baking odyssey began under the watchful eye and skilled hands of her Mississippi-born grandmother, affectionately known as Princess. In the kitchen, Princess imparted not just recipes, but a culinary philosophy that left an indelible mark on Tamara. A pinch, a shake, or just a lil — these were the units of measure in Princess’s kitchen, where shortcuts were frowned upon, and the authenticity of each dish was paramount.
Fast forward to today, Tamara, along with her husband Ken, forms the dynamic duo behind Royal Cheesecake & Varieties. Ken, culinary certified, drew inspiration from his own roots, baking pies from apples grown in their Detroit backyard under the guidance of his mother. The fusion of Mississippi and Detroit influences creates a unique blend of flavors that defines the offerings at Royal Cheesecake & Varieties. Their culinary venture took flight at Northgate Mall in Durham, North Carolina, during the holiday season of 2013. What started as a kiosk evolved into a journey through various farmers’ markets and festivals, including the African American Cultural Festival, Black Farmers Market, Got To Be NC, and the North Carolina State Fair.
In 2021, a grant opened new horizons for the duo, leading to the acquisition of a dessert truck. This mobile delight allowed them to spread the sweetness across different areas of North Carolina. The success continued, and in late 2022, armed with another grant and their own determination, they leveraged an SBA loan to establish their brick-and-mortar presence, a second food truck, and a commercial kitchen in Raleigh, NC.
Today, whether you catch a glimpse of their dessert truck, visit their bakery, or order online to have their desserts shipped, Royal Cheesecake & Varieties is a testament to the power of heritage, determination, and the sweet alchemy of old and new school baking.
